Dough
  1. In a medium bowl whisk dry ingredients and set aside. In a stand mixer, beat eggs and sugar until very think and light in color, about 3 minutes. Beat the vanilla. Gradually add the melted butter, then beat in sour cream in two additions. Scrape bottom of bowl and make sure everything is incorporated. With a spatula, gently fold dry ingredients in 4 additions. On the 4th addition add the 2 Tb of sprinkles and mix until just incorporated. Cover dough with plastic wrap and allow to sit for one hour.
Glaze
  1. In a medium bowl, mix powdered sugar, vanilla, half and half and food coloring until smooth. Cover and set aside until doughnuts and are ready to be glazed.
Frying the Dough
  1. Lightly flour two sheet pans and set aside. Once dough has rested for an hour, place dough on a lightly floured surface. With your hands-or rolling pin- press dough out to 1/2″-2/3″ thickness. With a 2 1/2 inch round cutter, cut dough and place on floured sheet pans. Using 1 inch round cutter (or large round pastry tip in my case) cut out the center of doughnuts. Save rounds for doughnut holes!
  2. Add canola oil to a deep medium sized pan, 1 1/2 inches in depth. Place thermometer on the pan and heat oil to a temperature of 365-370 degrees. While oil is heating up, place paper towels in another sheet pan and keep near stove. Fry doughnuts 3-4 at a time. Do not over crowd the pot, otherwise, oil temp will go down. Fry doughnuts for about 1 1/2-2 minutes on each side until golden brown. Fry doughnut holes in two batches. Place doughnuts on prepared pan with paper towels to absorb excess oil.
  3. Once doughnuts are cool enough to handle, dunk each one in vanilla glaze. Decorate with remaining sprinkles and enjoy!
